Ryan and Kevin did not just walk away from corporate life; they traded their suits for aprons and their steady paychecks for a 16-hour simmer. Trained by a Japanese ramen master, these two self-described “corporate hacks” set out to prove that authentic ramen does not take shortcuts. What started as consuming ridiculous amounts of ramen turned into a real question: what would it actually take to make our own, and make it right? The answer was Menya. First in Metuchen in 2020, then in Ridgewood, both built around the same stubborn belief that quality and community are the whole point
The 16-Hour Rule
Before opening, the founders earned a residency at Ramen Lab, Sun Noodle’s NYC incubator, where they developed recipes still on the menu today. Everything at Menya starts with the broth. Our tonkotsu simmers for 16 hours to pull out a depth of flavor you simply cannot fake or rush. From there, each bowl is finished with tender, slow-roasted, charred chashu pork, perfectly seasoned marinated eggs, and toppings prepped in-house. While other shops copy the concept, we stay loyal to our own craft recipes. We do not do cheap, and we do not do fast. That is the trade-off, and we will take it every time.

Menya is a ramen shop first, but not only a ramen shop. We pair soulful Japanese ramen with the golden crunch of Korean fried chicken — brined in homemade sauce, double-fried, and served in Original, Honey Butter, and Spicy Gochujang. And because everyone deserves a seat at the table, our kitchen developed a genuinely good vegan program, led by our Vegan Kimchi Miso Ramen and Spirit Lifter Vegan Curry. These are not afterthoughts; they carry the same depth and soul as our traditional bowls.
